Here is a great recipe to meet your daily veg requirements and lunchtime idea dilemma. Ingredients: 500g baby potatoes, 500g sweet potatoes, 4x garlic cloves, 1x red capsicum, 1x red onion, 80g baby spinach and pine nuts. Dressing: lemon juice, olive oil, mustard and oregano.
