Always trying to think of something new for lunch. Here’s a tasty chicken salad recipe that stores well in the fridge for the week. Just remember not to add dressing until you eat it otherwise it will go soggy. Ingredients: 1 chicken breast, 1/2 wombok cabbage, 2 carrots, 1 cup mint, 1 cup coriander and 1/2 cup peanuts.
